Every coffee here comes from a named cooperative, not an anonymous commodity lot — and we can tell you who grew it, at what altitude, and how it was processed.
Single origin means the coffee in the bag came from one place. Not one country loosely defined, but one cooperative, one growing region, one harvest. Nothing is added to round off the edges. What you taste is what that farm, that altitude and that processing method actually produced — which is the point, and also the risk. A single origin can be startling. It can also be uneven from one crop year to the next. That's the honest trade against a blend, which is built for consistency.

Africa
Ethiopia Natural is where coffee comes from, dried on the cherry rather than washed, and it tastes like it — blueberry, wine, almost jammy. Kenya is the other direction entirely: washed, bright, blackcurrant acidity that people either love immediately or need a cup to adjust to. Tanzania Peaberry is graded on bean shape rather than region — peaberries are the roughly five percent of cherries that produce one round seed instead of two flat ones, and they roast more evenly for it. Uganda is the quiet one: full-bodied, low acid, the most forgiving cup on this list.
Asia and the Pacific
Sumatra is wet-hulled, a processing method used almost nowhere else, and it produces the earthy, herbal, syrupy cup that Indonesian coffee is known for. Bali Blue comes from the same tradition with more fruit and less of the earth. Papua New Guinea sits between the two — Jamaican Blue Mountain stock grown at altitude, cleaner than either.
Latin America
The region most people mean when they say "coffee should taste like coffee." Colombia and Costa Rica are the balanced, caramel-sweet benchmarks. Guatemala brings cocoa and a little spice from volcanic soil. Brazil Santos is nutty and low-acid, the reason Brazil anchors so many espresso blends. Honduras and Nicaragua are the underrated pair — both quietly excellent and neither famous. Mexico is light, nutty and gentle. Peru is smooth and mild with a clean finish.
Decaf, done properly
Peru Decaf uses the Swiss Water Process — water, temperature and carbon, no chemical solvents. It removes about 99.9% of the caffeine, and unlike solvent methods it doesn't strip the character out with it. If you've written decaf off, this is the one that changes your mind.
One that breaks the rules
Bourbon Barrel Aged is a Guatemalan single origin rested thirty days in used bourbon barrels before roasting. The green beans take on the oak and vanilla from the wood — there's no alcohol in the finished cup, and nothing is sprayed on. It's the most distinctive coffee we sell.
Where to start
If you've mostly drunk supermarket coffee, start with Colombia or Guatemala — familiar enough to enjoy immediately, different enough to show you what you've been missing. If you want to understand what the fuss is about, buy Ethiopia Natural and Sumatra together and drink them side by side. They're about as far apart as coffee gets.
