Roast: Medium \\\\\\\ |\\\\\\\  Region: Jinotega, Nicaragua \\\\\\\ |\\\\\\\  Altitude: 1,000\\\\\\\–1,400m
Cup: Medium acidity, medium body, hazelnut, molasses, graham cracker, clean finish

This is dessert coffee that hasn't had anything added to it. Hazelnut, molasses and graham cracker, all from the bean, all from what altitude and careful processing do to a well-grown cherry.

It comes from COMULFAC \\\\\\\— Cooperativa Multifuncional Family Coffee R.L. \\\\\\\— founded in 2013 by a group of family-owned farms in Jinotega. The farms run from about 4 to 100 acres, and each has its own micro-mill, so depulping, fermenting and drying happen on the same land the cherries grew on.

That's the advantage of the cooperative structure here: the farms stay small and independent, but pooling resources gets them the market access and the quality consistency that small farms usually can't reach alone.

Caturra, Catuai, Bourbon, Catimor and Maragogype \\\\\\\— the last of which produces famously enormous beans. EP grade, fully washed and sun dried.

Brew it: drip or French press. Takes cream well if you want to lean into the dessert of it.

Pairs with: the last hour of the evening and a chapter you didn't mean to start.
