This is the coffee behind our Mexican Chocolate, and it's worth drinking on its own first so you can taste what's actually underneath the flavour.

Chiapas is Mexico's southernmost state and its most important coffee region. This lot comes from Alma de Chiapas, an umbrella cooperative made up of 599 farmers \\\\\\\— 490 men and 109 women \\\\\\\— cultivating 1,654 hectares between them.

Alma de Chiapas functions as more than a collection point. It's an incubator: it strengthens member groups in business management, finance and quality control with the explicit goal of graduating them into direct, independent membership at the next level up. In other words, it's structured to make itself unnecessary to the people it serves, which is a rarer ambition than it should be.

Typica, Bourbon, Marsellesa, Oro Azteca and a Costa Rica hybrid. Washed process, SHG and EP grade. The body is genuinely creamy, the chocolate is rich rather than dusty, and there's a dark cherry and orange lift that keeps it from being heavy.

Brew it: espresso if you have it \\\\\\\— this is a natural for it. Otherwise drip or French press.

Pairs with: late night, cold weather, and a book with a body in it.
