Roast: Medium \\\ |\\\  Region: Cerro Azul, Honduras \\\ |\\\  Altitude: 1,200\\\–1,600m
Cup: Apple, dark chocolate, nuts

Cerro Azul sits in the Honduran highlands \\\— lush mountains, cool temperatures, rich volcanic soil, and near-constant mist. That last part matters more than it sounds. Frequent cloud cover and steady rainfall slow the cherry's maturation, and slow maturation is what builds layered sweetness and balanced acidity rather than the flat sugar of a fast-ripened crop.

Coffee has been part of this area for generations. It's a livelihood and, from every account we've been given, a point of considerable local pride.

This lot is produced by COHORSIL \\\— Cooperativa Hormiguitas de Siguatepeque Limitada \\\— a cooperative of smallholder farmers. It provides training, technical assistance and shared facilities, so producers can improve yields without each having to fund their own infrastructure. It also invests in social programmes around education and reforestation, which is a longer game than most cooperatives play.

Typica, Bourbon and Catuai. Washed and sun dried. SHG and EP \\\— strictly high grown, European preparation.

Brew it: drip or pour-over. The apple note is clearest just below piping hot.

Pairs with: a rainy afternoon, which is roughly the weather it grew in.
