Chiapas is Mexico's southernmost state and its most important coffee region — high, mountainous, and close enough to Guatemala that the growing conditions are near identical.

This lot sits high, between 1,400 and 1,900 metres. Altitude slows the cherry down, and slow maturation is where the complexity comes from: lemon brightness on top, brown sugar through the middle, dark chocolate underneath, and a creamy body holding it together.

Washed process, from Typica, Catimor and Bourbon.

It's the most balanced of our three origin pods — brighter than the Bali, less sweet than the Peru, and the one to start with if you're not sure.
