Roast: Dark  |  Cup: Smoke, dark fruit, wine  |  Built for: French press and drip

Take African coffee to a French roast and something unusual happens: it doesn't disappear.

Conventional wisdom says roasting dark erases origin. Mostly that's true — past second crack the roast starts speaking louder than the bean, and delicate character is the first thing to go. It's why dark roasts so often taste like each other regardless of where the coffee came from.

African coffee resists that. The fruit and wine notes that make Ethiopian and Kenyan coffees distinctive are structural rather than delicate, and they hold on well past the point where a milder bean would have given up. What you get is a proper dark roast — smoky, oily-surfaced, low in acidity — with dark fruit still moving underneath it.

Bittersweet rather than bitter. There's a difference, and it comes down to stopping the roast before the sugars scorch instead of after.

Worth doing: buy it alongside the Central American

We roast French Roast Central American to the same level. Same technique, same darkness, different continent. Side by side, the Central American is rounder and sweeter with a caramel base; this one is sharper and more wine-like with the fruit persisting through the smoke.

Two bags, one afternoon, and you'll understand what origin actually does to a cup better than any amount of reading will teach you. It's the cheapest coffee education available.

If you want darker still, Italian Roast Deep Dive goes further and deliberately roasts the origin out.

Brew it: French press or drip. Coarse grind — dark roast is brittle and over-extracts fast.

Pairs with: late nights, arguments worth having, and anything you'd want a second cup for.
